It's basically a fast, homemade Indian-style puffed rice snack. It is quite similar to bhel or masala murmura. The total time taken is about 5 minutes. The key is to strike the right balance of spice, salt, crunch, and lemon.
Ingredients:
2 cups puffed rice (murmura)
1 small fresh onion, chop it into small pieces.
1 small tomato, chop into small pieces .
1-2 green chillies, finely chopped (optional)
*2 tbsp fresh coriander leaves, chopped
1/2 tsp salt
1/4 tsp red chilli powder
Pinch of black salt or chaat masala (optional, but highly recommended for street-food taste)
1-2 tsp lemon juice
Step by Step Process:
1. Check your puffed rice. If it feels soft or chewy , you should dry roast it in a dry pan for 2-3 mins on a low flame, without burning it. This is important as soggy puffed rice ruin the entire dish! The puffed rice must feel light and crisp. The texture is magic
2. Take a bowl and put all the puffed rice first. Now add chopped onions and tomatoes. The onions will provide sharp taste and crispiness and the tomatoes, some slight sweetness and moisture.
3. Now sprinkle salt and chili powder all over. Do not put it at once at one place, otherwise you will have too many salty bits or tasteless bits. Add black salt or chaat masala now if you have them – this gives it the 'street food' flavour.
4. Add chopped coriander leaves. Fresh coriander improves the aroma and freshness greatly, it is very often underestimated.
5. Now squeeze the fresh lemon juice on it. Lemon not only provides the sour flavor; it binds everything together well, cutting the dry taste of the puffed rice.
6. Quickly mix all the ingredients using a spoon or hands. Don't let it stand for more than 5-10 mins after putting tomato and lemon in it, as the puffed rice will absorb moisture very quickly and will become soggy.
7. Finally taste and adjust the salt/lemon if needed. Usually beginners get too much salt or too much lemon. Take it slowly.
Tips people usually use to enhance it:
Add roasted peanuts for some protein and extra crunch.
Add cucumber for coolness.
Add sev for that street-style texture.
